Adorable baby corn made into a mini plant-based version of elotes with lime juice, vegan mayo, vegan feta, and chili powder. Elotes are a popular corn-on-a-stick snack sold by street vendors in Mexico.
This is the perfect snack or side dish and has made it into the rotation at my house. The secret to making these mini Mexican street corn extra delicious is to add the lime juice first, which makes it easier to add the mayo, cheese, and chili powder next. I enjoy eating these cute baby corn with chopsticks as an afternoon snack. If you want to go the extra mile for a more aesthetically pleasing look, char the corn using a cast iron skillet. Heat up a cast iron skillet and after the corn is microwaved, then rotate the corn around the pan until char marks form on the corn.

INGREDIENTS
- 6oz baby corn (Fresh or canned)
- 1/2 lime (juiced)
- 1 tbsp vegan mayo
- 1 tbsp vegan feta cheese or parmesan
- 1/8 tsp chili powder
- Cilantro for topping
INSTRUCTIONS
- Microwave baby corn for 2-3 minutes
- Add the corn to a medium sized bowl and squeeze lime juice on top
- Add in mayo and toss to combine then mix in the feta cheese and sprinkle with chili powder.
- Top with cilantro and more cheese and enjoy!
Baby Corn Elote (Mexican Street Corn)
Ingredients
- 6 oz Baby Corn I used trader joes, but can find baby corn canned too.
- 1/2 Lime (Juiced)
- 1 tbsp vegan mayo
- 1 tbsp vegan feta cheese or parmesan (I used follow your heart feta)
- 1/4 tsp chili powder
Instructions
- Microwave baby corn in package for 2 minutes and place baby corn in a medium sized bowl.
- Add the juice of 1/2 of a lime and a pinch of salt.
- Add in mayonnaise and toss to combine, then mix in the feta cheese and sprinkle with chili powder.
